The pitta pizza secret for super-busy mums (& dads)

Using vegetables to make a face on pitta pizzas

If you’re looking for food that’s super-speedy, super-simple and many other super-s type adjectives AND has a vague pretence at home cooking, I’ll let you into a (super) secret: pizza pittas.

Yup, you’ve guessed it: they’re pizzas that are made on pitta bread. I may be biased but I reckon pitta bases are far tastier than their shop-bought equivalents and far less hassle than whipping up your own batch of dough. 

Other than a pitta base, it’s really up to you how simple you keep things. If you fancy concocting your own pizza sauce, go for it. Personally, I stick to the basics – a layer of tomato puree and pesto topped off with a sprinkling of cheddar or mozzarella cheese works well. Alternatively use a jar of ready-made pizza sauce (available in most supermarkets) for an overwhelmingly trouble-free version. 

Now your basic pizza is ready, it’s time for the toppings. Here’s where you can really let your kids’ creative side soar. Will they create a self-portrait out of olives? Or perhaps a pepper and pepperoni tree? Maybe they’ll go freestyle with a design bubbling with colourful shapes and flavours?

Once your artistic accomplishment is ready, pop it in the oven for about 10 minutes. Ta da, your personally designed pitta pizza is ready for the family to devour. Enjoy!


Pitta Pizza Recipe

To prove it’s a real meal, here’s your very own recipe for pitta pizzas.

Ingredients 

  • Pitta bread – any variety

  • Pizza sauce – a shop-bought jar, your perfect blend of tomato puree / pesto or whip up your own version, if you fancy posing as a domestic goddess

  • Grated mozzarella / cheddar cheese to suit your family’s tastes

  • Toppings of your choice – tomatoes, olives, pepper, pineapple, ham and pepperoni give tons of scope for creativity but go for whatever your family loves.

Method

  1. Take the pitta bread out of the packet and lay it out on a baking tray.

  2. Spread the sauce on each piece of pitta bread. Make sure you get up to the edges unless you want them extra crispy / burnt.

  3. Sprinkle grated cheese on top.

  4. Add your toppings, making sure you’re super creative.

  5. Pop into a medium-hot oven for about 10 minutes.

  6. Spend a moment enjoying your creation.

  7. Enjoy your amazing, ‘home cooked’ pizza!

In case you’re wondering where these wonderful pitta pizzas came from, I can’t claim credit for the original idea. My daughter suggested it after reading about Tom Gates trying them out (if you’ve got a kid aged between 6 and 12 and you’ve not found Liz Pichon’s brilliant Tom Gates’ books yet, you’re missing out – look them up now!). We shamelessly adopted the idea and have been having regular pitta pizza days ever since. 

Not only are they the height of effortless cooking, my kids love creating their own pizzas – which means they’re guaranteed to eat them. And that’s a win!
